... In those early days [ie. first half of 1800's] most of the distilleries were [ie. on the Guyana] owned by the English companies Booker Bros. McConnel & Company Limited, trading as Booker Rum Company, and Sandbach Parker Holdings, trading as Diamond Liquors Limited. These two companies were amalgamated in 1976 as Guyana Liquor Corp. and in 1983, this was changed to Demerara Distillers Limited...

THE COMPANY
Moby Dick Imported Caribbean Rum is exclusively distilled and imported for Cape Wine & Brandy Company Limited by the Jamaican company, J. Booker Rum Merchants Ltd, established in 1815.

THE SUGAR ESTATES
The company owns several sugar estates which are dotted around the island. On these estates sugar cane ripens to perfection under the warm Jamaican sun. When the time is right the cane is harvested and the sugar extracted. The distiller then transforms the raw sugar into molasses, which is the end product for the making of rum.
After fermentation, the liquid is double distilled, using both the pot and column still methods. Pot still distillation is the traditional method that has been handed down from the earliest days of rum-making in Jamaica and is known to produce richer, more flavoured rums. The column or continuous method involves the use of three columns and can produce varying products from very light rum to the purest alcohol.

AGEING
The Moby Dick blend consists of selected rums of varying styles and ages. The maturation process takes place in 40 gallon oak barrels which have been charred on the inside.

THE RUM
Moby Dick Imported Caribbean Rum is rich and dark in colour, with a distinctive softness and a rounded taste. Bottled in the traditional grog-shaped bottle used on the English sailing ships of yesteryear, it is exceptionally mixable and can be enjoyed in a multitude of cocktails.
